Resveratrol structure includes phytoalexin, produced by plants like red grapes and peanuts in the event of fungal and bacterial attacks. It is fairly stable and should preferably be stored in an amber colored bottle away from direct sun light and humidity. Trans-resveratrol remains stable in atmosphere under 75% humidity and 40 degrees C temperature. If exposed to ultra violet rays it could undergo isomerisation to convert itself into its isomer of cis- form.
